Roasted Cauliflower “Rice”

An easy way to sneak in extra vegetables into your day! Try this as a side dish with your next meal. Alternatively, you can also experiment and make this the star of your dish in different ways such as cauliflower “fried rice”, red beans and “rice”, or a “rice” casserole.

Black Bean Hummus

Are you heading to a Super Bowl party this Sunday and looking for a healthy appetizer to bring to share? Try this homemade black bean hummus! Serve with fresh raw veggies and some whole grain tortilla chips or pita bread. Unique and delicious!

Summer Vegetable Chowder

A quick one pot dinner perfect for using up fresh summer veggies! The “creaminess” comes from sautéed and puréed zucchini, onion, and celery which makes this soup creamy and flavorful but without a ton of calories and fat! My husband, who LOVES soup, approved of this meatless summer meal. A new weeknight staple!

Ingredients:
1 Tbsp canola oil
1 small sweet yellow onion, small diced
2 celery stalks, small diced
1 medium zucchini, small diced
5 cups low-sodium chicken broth (or vegetable broth)
salt & ground black pepper, to taste
1/4 – 1/2 tsp granulated garlic
1/4 – 1/2 tsp red pepper flakes (optional.. use as desired for a hint of spicy)
1 pound baby red or yellow potatoes, chopped into bite sized pieces
1 red bell pepper, small diced
2 cups fresh corn kernels (or frozen)
2 Tbsp cream (optional.. adds a creamier texture to the soup)

Grilled “Mexican Street Corn”

Summer time and using the grill seem to go hand in hand in my house. We like to keep the cooking heat outside so our house doesn’t heat up! This recipe for grilled corn is a unique side dish and a fun take on the traditional Mexican Street corn. If you cannot find crema Mexicana, swap it out for reduced fat sour cream or plain greek yogurt.

Oven Roasted Brussels Sprouts

One of my favorite vegetable side dishes! I love the crispy edges and the bold flavors produced by roasting in a hot oven. Cauliflower is another great vegetable to cook in a similar way.

Balsamic Vinaigrette Marinated Grilled Vegetables

Did you know that today is National Eat Vegetables Day? Here is a delicious recipe for a veggie side dish! Pair with some grilled chicken or fish for a delicious and light meal.

2 Tbsp honey
1 Tbsp olive oil
1 tsp ground black pepper
1/2 tsp salt
4 garlic cloves, minced
4 plum tomatoes, halved
2 zucchini, cut lengthwise into 1/4-inch slices
1 (1-pound) eggplant, cut crosswise into 1-inch thick slices
