Slow Cooker Pork Loin with Apples

A delicious dinner that cooks away in the slow cooker while you are at work! Use your own favorite all purpose seasoning for the pork loin, or experiment with your own. Serve with a brown rice pilaf and steamed vegetables for a hearty, filling, and healthy meal.


1 pork loin (about 2 pounds)
3 Tbsp all purpose meat rub, as desired (see sample recipe below)
1 small yellow onion, thinly sliced
2-3 cloves garlic, minced
1/2 cup dry white wine
2 apples, sliced
2 cups low sodium chicken broth

Marinated & Roasted Mustard Pork Loin

My new go-to for pork marinade! This would work not only for pork loins, but also pork chops or cubed pork for kebabs! Oven roast or grill after marinating for delicious and tender pork. I love to serve this dish with roasted veggies like potatoes and brussels sprouts.


Marinade Ingredients:
2 cloves garlic, minced
2 Tbsp Dijon mustard
1 Tbsp soy sauce
2 tsp dried italian blend seasoning
2 Tbsp fresh lemon juice
1/4 cup extra virgin olive oil

Pork Roast Ingredients:
1-2 lb pork loin

Oven Roasted Pork with Fall Vegetables

If you have never eaten rutabaga or fennel, here is a great chance to try it! This recipe is a delicious and simple way to cook a pork loin with seasonal fall vegetables. Serve with a fresh green salad for a complete and well rounded meal. 


2 fennel bulbs
2 small onions
1 Tbsp olive oil, divided
4 cups peeled and cubed rutabaga
16 baby carrots (about 3/4 pound)
1 (2 1/4 pound) boneless pork loin roast
cooking spray
2 Tbsp chopped fresh sage
3/4 tsp salt, divided
3/4 tsp ground black pepper, divided
3/4 cup low-sodium chicken broth
1/2 cup dry white wine
2 tsp Dijon mustard
