Slow Cooker Pork Chops with Mushrooms and Carrots

A simple to prepare slow cooked meal! Perfect for a fall evening meal. Great on its own, or serve with a fresh salad for a light vegetable side.

Ingredients:
1 1/2 cups low sodium chicken broth
1 1/2 tsp sherry vinegar
3 Tbsp all-purpose flour
cooking spray
3/4 pound carrots, peeled & cut into 2-inch pieces
1/2 pound baby bella or shiitake mushrooms, stems removed and caps quartered
1/2 cup chopped onion
2 garlic cloves, minced
4 fresh thyme sprigs
2 fresh oregano sprigs
1 Tbsp olive oil
4 (6-oz) bone-in pork chops
salt & black pepper, as desired
1/4 cup dry white wine
6 oz whole wheat egg noodles
2 Tbsp heavy cream

Crispy Pork Medallions

A quick and easy weeknight meal using pantry staples. You can swap out the pork medallions for  pork chops. Serve with some steamed or roasted veggies for a complete meal.

2 Tbsp Dijon mustard
1 pound pork tenderloin, trimmed and cut into 8 medallions
1/2 cup panko breadcrumbs
1 Tbsp chopped fresh thyme
1 Tbsp minced fresh parsley
1/8 tsp salt
1/8 tsp ground black pepper
2 Tbsp olive oil

BBQ Pork Chops with Kimchi-Style Slaw

A simple barbecue style marinade with only 8 ingredients – most of which are pantry staples! Serve with a crunchy kimchi-style slaw (recipe below) for a delicious and simple meal!

2 Tbsp dark brown sugar
2 Tbsp low-sodium soy sauce
1 Tbsp dark sesame oil
1 Tbsp pineapple juice
2 tsp minced fresh garlic
1 1/2 tsp sake
1/4 tsp crushed red pepper
1/4 tsp ground black pepper
4 (4-oz) bone-in pork chops

Pork Chops with Two Bean Salsa

I always buy pork chops when they are on sale and then freeze them (saves me a lot of money!). This is a great and quick recipe for a weeknight meal. Delicious with steamed veggies or a salad.

Ingredients:
1 (16-0z) can black beans, rinsed and drained
1 (16-oz) can great northern beans, rinsed and drained
1 (14 1/2-oz) can mexican-style tomatoes, drained and chopped
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
2 small jalapeño peppers, chopped
2 garlic cloves, minced
3 Tbsp white wine vinegar
1/2 tsp sugar
1/2 tsp salt
1/8 tsp pepper
4 (1 1/2-inch-thick) boneless pork loin chops

Balsamic-Glazed Pork Chops

This is one of my favorite pork recipes to make! It is very quick and delicious – the balsamic vinegar and the caramelized shallots are a great compliment to the pork. Serve with some pilaf and steamed veggies for a complete meal!

Ingredients:
4 (3/4-inch thick) pork chops (about 2 lbs)
salt and pepper as desired
2 Tbsp olive oil
6 oz small shallots, peeled and quartered
2/3 cup balsamic vinegar
1 1/2 tsp sugar

Directions:
1. Pat pork dry and sprinkle with salt and pepper as desired.
2. Heat oil in a large skillet over medium-high heat. Sauté shallots for 2-3 minutes or until tender. Sear pork chops in the pan with the shallots on both sides until browned, about 2 minutes each side.
3. Add vinegar to the skillet with pork and shallots; sprinkle the sugar throughout pan. Stir.
4. Cook until vinegar has thickened and pork is cooked through, making sure to turn pork chops 2-3 times to coat with the sauce. (If the pork is finished cooking before the sauce has thickened, remove pork from pan and keep warm while the sauce finishes.)

Yield: 4 servings
