Slow Cooker Pork Loin with Apples

A delicious dinner that cooks away in the slow cooker while you are at work! Use your own favorite all purpose seasoning for the pork loin, or experiment with your own. Serve with a brown rice pilaf and steamed vegetables for a hearty, filling, and healthy meal.

Slow Cooker Chicken Tortilla Soup

Fall is my favorite time of year — I can stock up my freezer with a lot of different comforting soups! This recipe is perfect to make on the weekend while you are running errands, or during the week while you are at work. My favorite way to serve is with some crispy tortilla chips & cheese on top!

Ingredients:
1 onion, diced
4 garlic cloves, minced
1 green bell pepper, chopped
1 jalapeño pepper, seeded and chopped
2 14.5 oz cans diced tomatoes
1 can tomatoes with green chilies
6 cups chicken stock
1 can black beans, drained
1-2 Tbsp ground cumin
1-2 Tbsp chili powder
1-2 Tbsp taco seasoning
2 bay leaves
4 boneless chicken breast halves (uncooked)
1/2 cup fresh cilantro, chopped
14 oz frozen corn
1 lime, juiced

Slow Cooker Sweet & Sour Chicken

Quick and easy dinner packed with fruits and vegetables! Serve over brown rice for a more filling and complete meal. You can swap in pork tenderloin for chicken if you want to mix it up.

1/3 cup sugar
1/3 cup ketchup
1/4 cup orange juice
3 Tbsp cornstarch
3 Tbsp cider vinegar
2 Tbsp low-sodium soy sauce

1 pound skinless, boneless chicken thighs, cut into 1-inch cubes

Slow Cooker Chicken Cacciatore

Serve this simple crock pot meal over polenta or pasta. Serve with some steamed vegetables for a complete meal.
This dish is great as leftovers too — can easily transform the leftovers into a soup by shredding the chicken and adding chicken broth, diced zucchini, diced carrots, and any other veggies you may have — just simmer all together until veggies are tender.

Slow Cooker Shredded Beef Tacos

An easy and delicious beef taco! Start in the morning before heading to work and come home to a delicious, warm & slightly spicy meal! I like to make mexican rice with some of the leftover juices from the slow cooker.

1 Tbsp cumin
1 1/2 tsp paprika
freshly cracked black pepper, to taste
2 Tbsp olive oil
2 lbs boneless chuck roast
1/2 large sweet onion, diced
4 garlic cloves, minced
1 (10.5 oz) can beef broth
3 Tbsp tomato paste
1-2 chipotle pepper in adobo sauce, minced

Crock Pot Spicy Chicken Stew

A warm and filling stew perfect on a chilly night. You can easily adjust the spiciness and flavor of this stew by mixing up the type of bottled salsa used in the stew. Delicious when served with corn bread muffins.

2 baking potatoes, peeled and cut into chunks
1 (10 oz) package frozen whole-kernel corn
2 celery stalks, chopped
2 carrots, peeled and cut into chunks
1 onion, chopped
2 garlic cloves, minced
1 cup bottled salsa
1 1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp freshly ground black pepper
2 pounds skinless, boneless chicken breast
3 cups low-sodium chicken broth
4 (6-inch) corn tortillas, cut into strips
chopped fresh cilantro (optional)
