Black Bean Hummus

Are you heading to a Super Bowl party this Sunday and looking for a healthy appetizer to bring to share? Try this homemade black bean hummus! Serve with fresh raw veggies and some whole grain tortilla chips or pita bread. Unique and delicious!

Ingredients:
1/2 cup chopped fresh cilantro, divided
2 Tbsp tahini (sesame seed paste)
2 Tbsp water
2 Tbsp fresh lime juice
1 Tbsp olive oil
3/4 tsp ground cumin

Black Bean & Tomato Quinoa Salad

A light and refreshing side dish to a summer meal! Great as leftovers, too. Quinoa is a whole grain packed with fiber and protein. Serve this dish with a spiced grilled fish or chicken for a perfect meal.

Meatless Monday – Black Bean Pizza

Homemade pizza is made easy with pre-made pizza crust in a can! Try this meatless pizza for dinner tonight for meatless monday!

Ingredients:
whole wheat pizza dough (I use the canned pizza crust)
2 (15 oz) cans black beans, rinsed and drained
1 Tbsp olive oil
salt and black pepper, to taste
1/4 chopped cilantro
1 tsp hot sauce
2 tsp cumin
1 medium red pepper, seeded and finely chopped
4-5 green onions, finely chopped
1-2 cups shredded sharp cheddar cheese
chopped tomatoes
shredded lettuce
sour cream or light ranch for drizzling
