Slow Cooker Pork Loin with Apples

A delicious dinner that cooks away in the slow cooker while you are at work! Use your own favorite all purpose seasoning for the pork loin, or experiment with your own. Serve with a brown rice pilaf and steamed vegetables for a hearty, filling, and healthy meal.


1 pork loin (about 2 pounds)
3 Tbsp all purpose meat rub, as desired (see sample recipe below)
1 small yellow onion, thinly sliced
2-3 cloves garlic, minced
1/2 cup dry white wine
2 apples, sliced

Sweet Potato Apple Bake

3 cups sliced peeled tart apples
3/4 cup packed brown sugar
3/4 tsp ground nutmeg
1 tsp ground cinnamon
1/4 tsp ground allspice

Carrot, Apple, & Ginger Smoothie

A refreshing and nourishing smoothie – perfect to start the day! Add some vanilla protein powder to amp up the nutrition for a more filling and satisfying breakfast on the go.


1/2 cup 100% carrot juice, chilled
1/2 cup unsweetened applesauce
1/2 cup fat-free vanilla greek yogurt
1 tsp fresh lemon juice
1/2 tsp grated peeled fresh ginger
1 frozen sliced banana (peel and slice before freezing)
5 ice cubes (about 2 oz)

1. Place all ingredients in a blender, process 2 minutes or until smooth. Serve.

Yield: 2 servings (138 calories, 0.1 g total fat, 0 g saturated fat, 4.3 g protein, 32.7 g carbohydrate, 2.3 g fiber, 2 mg cholesterol)

Turkey, Apple, & Swiss Melt

A quick and easy but delicious fall sandwich. You can vary up the fruit – swap out the Granny Smith apples with any other variety of apple or even pear slices. Great served with a cold vegetable salad. 


1 Tbsp Dijon mustard
1 Tbsp honey
8 (1-oz) slices whole-wheat bread
4 (1-oz) slices Swiss cheese
5 oz thinly sliced Granny Smith apple
8 oz thinly sliced lower-sodium deli turkey breast

Apple Cranberry Wheat Berry Salad

A great fall dish – both as a side or as the main entree! If making ahead of time, stir in the baby spinach apples, and pecans right before serving.

1 cup uncooked wheat berries, rinsed
salt & ground black pepper, to taste
1 Tbsp apple cider vinegar
1 tsp coarse ground Dijon mustard
1 tsp pure maple syrup
1 Tbsp apple cider (or 100% apple juice)
2 Tbsp extra virgin olive oil
1/2 cup dried cranberries
1/2 cup pecan halves, toasted and chopped
2 packed cups baby spinach
1 large apple, chopped

Savory Baked Apples

Bring fall inside with this recipe for savory baked apples! Full of delicious fall flavors, this dish will be a sure hit for dinner. This recipe is time consuming, but so worth it!


2/3 cup low sodium chicken broth
1/3 cup uncooked brown rice
1/3 cup dried cranberries
1/3 cup apple cider
4 large apples, cored (Honeycrisp or Rome apples)
1 1/2 Tbsp butter, divided and melted
1 (4-oz) link sweet Italian sausage, casings removed
3/4 cup finely chopped yellow onion
1/3 cup finely chopped carrot
1/4 tsp ground cinnamon
1/8 tsp ground red pepper
3 garlic cloves, minced
1/4 cup chopped walnuts, toasted
3 Tbsp minced green onions
3/4 tsp salt
1/2 tsp dried sage
1/2 cup shredded Swiss cheese
