Slow Cooker Pork Loin with Apples

A delicious dinner that cooks away in the slow cooker while you are at work! Use your own favorite all purpose seasoning for the pork loin, or experiment with your own. Serve with a brown rice pilaf and steamed vegetables for a hearty, filling, and healthy meal.


1 pork loin (about 2 pounds)
3 Tbsp all purpose meat rub, as desired (see sample recipe below)
1 small yellow onion, thinly sliced
2-3 cloves garlic, minced
1/2 cup dry white wine
2 apples, sliced
2 cups low sodium chicken broth
cracked black pepper, to taste

1. Season pork loin with pork rub as desired. (Bonus: season the pork loin the night before cooking and wrap in plastic wrap to marinate). Sear on medium-high heat until brown on all sides. Set aside.
2. Saute yellow onion and garlic until soft and lightly browned. Deglaze with white wine.
3. Place pork, sautéed onion mixture, and apples in slow cooker. Top with low sodium chicken broth and season with pepper, as desired.
4. Cook in slow cooker on low for 8 hours, or until cooked through. (Alternatively, can do high for 4 hours).

All purpose meat rub sample recipe: 
2 Tbsp brown sugar
2 tsp salt
1 tsp paprika
1 Tbsp dry mustard powder
1 tsp ground black pepper
2 tsp salt-free Italian seasoning blend
1 tsp granulated garlic
