One of my favorite vegetable side dishes! I love the crispy edges and the bold flavors produced by roasting in a hot oven. Cauliflower is another great vegetable to cook in a similar way.
1 pound Brussels Sprouts
2 Tbsp Extra-Virigin Olive Oil
salt and ground black pepper, to taste (I usually use 1/4 tsp of each)
1 tsp crushed red pepper flakes (more or less, as desired)
1. Preheat oven to 400 degrees.
2. Trim bottom off brussels sprouts, and halve lengthwise. Remove any rough outer leaves.
3. Toss brussels sprouts with olive oil and seasoning.
4. Place on a foil lined baking sheet (cut side down). Roast in the oven until browned and slightly crispy, about 30 minutes. Flip & stir for the last 15-10 minutes of cooking.
Yield: 4 servings (110 calories, 7 g total fat, 1 g saturated fat, 0mg cholesterol, 4 g fiber, 10 g carbohydrate, 4 g protein)
