Sweet Potato Apple Bake

With one of the biggest eating days of the year right around the corner, now is the time to think about what you plan on serving for Thanksgiving! The average adult consumes over 4,500 calories on Thanksgiving — maybe it is time to lighten up the meal!! Instead of a calorie, sugar, and fat heavy sweet potato casserole, try this lightened up sweet potato apple bake! All the delicious flavors you are looking for, but with less calories!

Ingredients:
3 cups sliced peeled cooked sweet potatoes
3 cups sliced peeled tart apples
3/4 cup packed brown sugar
3/4 tsp ground nutmeg
1 tsp ground cinnamon
1/4 tsp ground allspice
1/4 tsp salt
dash pepper
1 Tbsp butter

Directions:
1. In a greased 1 1/2 quart baking dish, layer half of the sweet potatoes and apples.
2. In a small bowl, combine the brown sugar, nutmeg, cinnamon, allspice, salt and pepper. Sprinkle half over the apples. Dot with half of the butter.
3. Repeat layers.
4. Cover and bake at 350 degrees for 15 minutes. Baste with pan juices. Bake, uncovered 15 minutes longer or until apples are tender.

Yield: 8 servings (167 calories, 2 g total fat, 4 mg cholesterol, 38 g carbohydrate, 2 g fiber, 1 g protein)
