Ranch Style Beef Wraps

A fun kid-friendly recipe packed full of lean protein, whole grains, and veggies! Serve with apple slices for a delicious and easy meal.

1 pound lean ground beef
1 cup water
1/3 cup uncooked quinoa
2 Tbsp dry ranch dressing mix
1/4 tsp black pepper
2 cups packaged broccoli or coleslaw mix
4 medium whole grain tortillas
toppings, as desired (apple slices, red bell pepper, cucumber, carrot, sliced almonds, or chow main noodles…)

1. Heat large nonstick skillet over medium heat until hot. Add ground beef and cook 8-10 minutes, break into 1/2-inch crumbles and stirring occasionally. Remove fat drippings.
2. Stir in water, quinoa, ranch dressing mix and pepper – bring to a boil. Reduce heat, cover and simmer 10-15 minutes or until quinoa is tender.
3Stir in slaw and cook uncovered 3-5 minutes or until the slaw is crisp-tender, stirring occasionally.
4. Divide beef mixture evenly among tortillas and garnish with toppings, as desired.

Yield: 4 servings (418 calories, 12 g fat, 3 g saturated fat, 76 mg cholesterol, 41 g carbohydrate, 6.8 g fiber, 31 g protein)
