Mexican Pizza

Taco Bell style mexican pizza.. made a little healthier! Yes, even as a dietitian, I do have fast food cravings and a Taco Bell mexican pizza is one of them! Try this homemade version for a healthier alternative.

Ingredients:
1 pound lean ground beef or turkey
1 packet taco seasoning (I use Penzeys taco seasoning)
1/2 cup water
6 medium size flour tortillas
1 (16 oz) can refried beans
1 (16 oz) can red enchilada sauce
1 cup shredded cheddar cheese and pepper-jack cheese

Breakfast Tacos with Homemade Salsa

A delicious and easy breakfast taco! Not just for breakfast, great for a simple dinner too. Mix it up and add in some fajita style veggies – sliced bell peppers and onions. Serve with fresh fruit for a complete meal.

Chicken Tacos with Mango Jicama Salad

Fresh mango and crunchy jicama complement the spicy chicken in this mexican inspired taco dish. Serve with refried beans and mexican rice for a complete meal.

1/2 cup sliced peeled ripe mango

Slow Cooker Shredded Beef Tacos

An easy and delicious beef taco! Start in the morning before heading to work and come home to a delicious, warm & slightly spicy meal! I like to make mexican rice with some of the leftover juices from the slow cooker.

2 Tbsp chili powder
1 Tbsp cumin
1 1/2 tsp paprika
freshly cracked black pepper, to taste
2 Tbsp olive oil
2 lbs boneless chuck roast
1/2 large sweet onion, diced
4 garlic cloves, minced
1 (10.5 oz) can beef broth
3 Tbsp tomato paste
1-2 chipotle pepper in adobo sauce, minced

Sweet & Spicy Citrus Tilapia

A quick and easy marinade makes this fish pop for dinner! Also yummy on chicken – marinate longer than this recipe states and then grill it outside! Great bright flavors. Pair with freshly steamed veggies or a cool marinated vegetable salad for a complete meal.

Thai Beef Salad

This deliciously light salad is perfect for a light dinner. Thinly sliced steak adds nice flavor and mixes up the weekly rotation of chicken at my house. Good for leftovers the next day too – especially cold!

1 cup loosely packed fresh cilantro leaves
1/4 cup fresh lime juice
2 Tbsp low-sodium soy sauce
1 1/2 Tbsp Thai fish sauce
1 Tbsp honey
2 tsp grated orange rind
2 garlic cloves, peeled
1/2 small serrano chile
2 tsp olive oil
4 (4-oz) beef tenderloin steaks, trimmed
