Mongolian Beef

Instead of getting take-out chinese tonight, try this quick and easy homemade mongolian beef! Ready in about 20 minutes, this may be even faster than waiting for take out! Serve over brown rice or wide egg noodles to soak up any extra sauce. 


2 Tbsp low-sodium soy sauce
1 tsp sugar
1 tsp cornstarch
2 tsp dry sherry
2 tsp hoisin sauce
1 tsp rice vinegar
1 tsp chile paste with garlic
1/4 tsp salt
2 tsp peanut oil
1 Tbsp minced peeled fresh ginger
1 Tbsp minced peeled fresh garlic
1 pound sirloin steak, thinly sliced across the grain
16 medium green onions, cut into 2-inch pieces

1. Combine first 8 ingredients, stirring until smooth.
2. Heat peanut oil in a large nonstick skillet over medium-high heat. Add minced ginger, minced garlic, and beef. Sauté for 2 minutes or until beef is browned.
3. Add green onion pieces and sauté for 30 seconds. Add soy sauce m mixture, cook 1 minute or until thickened – stir constantly.

Yield: 4 servings (237 calories, 10.5 g total fat, 3.5 g saturated fat, 26 g protein, 9.1 g carbohydrate, 1.7 g fiber, 60 mg cholesterol)
