A quick and delicious weekend breakfast using pantry staples! I often keep sliced french bread in my freezer to quickly pull out for french toast. (great for garlic bread too!)
1/4 cup skim milk
1/2 tsp vanilla extract
cinnamon, to taste
8 slices bread (preferably somewhat stale)
1. In a shallow bowl, combine eggs, milk and vanilla. Whisk well to combine.
2. Heat a skillet over medium heat.
3. Dip one bread slice in egg mixture. Drop a small amount of butter in the pan and fry bread until golden brown, flip to cook other side. Repeat with all 8 bread slices.
4. Serve with a light dusting of powdered sugar, maple syrup, and fresh berries.
Yield: 4 servings
