A quick and easy but delicious fall sandwich. You can vary up the fruit – swap out the Granny Smith apples with any other variety of apple or even pear slices. Great served with a cold vegetable salad.
1 Tbsp Dijon mustard
1 Tbsp honey
8 (1-oz) slices whole-wheat bread
4 (1-oz) slices Swiss cheese
5 oz thinly sliced Granny Smith apple
8 oz thinly sliced lower-sodium deli turkey breast
1. Combine mustard and honey in a small bowl. Spread one side of each of 4 bread slices with 1 1/2 tsp mustard mixture.
2. Place one cheese slice on dressed side of bread slices and top each with 5 apple slices and 2 oz of turkey. Top sandwiches with remaining 4 bread slices
3. Coat both sides of sandwiches with cooking spray. Heat a large nonstick skillet over medium-high heat. Add sandwiches to pan. Cook 2 minutes on each side of until bread is browned and cheese melts.
Yield: 4 servings (350 calories, 10.9 g total fat, 5.5 g saturated fat, 27.2 g protein, 34.5 g carbohydrate, 4.3 g fiber, 46 mg cholesterol)
