Going meatless once a week may reduce your risk of preventable chronic diseases such as obesity, cardiovascular disease, diabetes, and cancer due to reducing your intake of total fat and increasing intake of healthy alternatives. 1 (13.8 oz) can refrigerated whole wheat pizza crust dough
1 garlic clove, halved
1 large Heirloom tomato, chopped
1/2 cup shredded part-skim mozzarella cheese
3/4 cup crumbled herbed goat cheese
1. Prepare grill to medium heat.
2. Unroll dough onto a large baking sheet coated with cooking spray. Pat dough into a 12 x 9 inch rectangle. Lightly coat dough with cooking spray.
3. Place dough on grill rack coated with cooking spray and grill 1 minute or until lightly browned.
4. Turn crust over on grill and rub with garlic. Sprinkle with tomato and cheeses. Close grill lid and grill for 3 more minutes. Serve immediately.
Yield: 6 servings (242 calories, 8 g total fat, 4.4 g saturated fat, 10.7 g protein, 33.1 g carbohydrate, 2.4 g fiber, 17 mg cholesterol)
