A light and fresh side dish for many different meals. Quick to prepare and delightfully delicious! Great as leftovers, too.
3 Tbsp sesame seeds, toasted
2 Tbsp white miso (or low-sodium soy sauce)
1 Tbsp rice vinegar
1 Tbsp honey
1 Tbsp hot water
1 tsp crushed red pepper
2 tsp dark sesame oil
1/4 tsp salt
4 cups thinly sliced seeded cucumber
1 cup thinly sliced green onions
1 (9-oz) package fresh linguine pasta
1. Combine sesame seeds, miso, vinegar, honey, hot water, red pepper, sesame oil, salt, cucumber, and green onions in a bowl.
2. Cut linguine into thirds, cook according to directions. Drain and rinse with cold water.
3. Toss pasta with cucumber mixture.
Yield: 6 servings (207 calories, 5.2 g total fat, 1.1 g saturated fat)
