Carmen’s Sloppy Joes

My homemade sloppy joes are “healthified” with extra veggies and my own sloppy joe sauce! Serve on whole wheat hamburger buns with a side salad for a complete and balanced meal.


1 Tbsp olive oil
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small yellow onion, chopped
2 garlic cloves, chopped
salt and black pepper, to taste
1 pound lean ground turkey
1 (6-oz) can tomato sauce
2 Tbsp tomato paste
3/4 cup barbecue sauce
1 Tbsp worcestershire sauce
1 tsp hot sauce
whole wheat hamburger buns

1. Heat oil in a large skillet with straight sides. Add the bell peppers, onion, and garlic. Saute until tender, about 3 minutes. Season with salt and pepper.
2. Add the ground turkey to the vegetables. Stir and cook about 8 minutes or until the meat is cooked through.
3. Add tomato sauce, tomato paste, barbecue paste, worcestershire, and hot sauce to the skillet. Stir and simmer until thickened, about 10 minutes. Serve on whole wheat hamburger bun.
