Baked in a miniature muffin pan, these frittatas make a perfect appetizer! Mix up the flavors by adding bacon instead of ham or stir in spinach, mushrooms, and swiss cheese instead of ham & cheddar.
1/2 cup finely chopped onion
2/3 cup chopped ham
1/3 cup shredded reduced-fat extra-sharp cheddar cheese
2 Tbsp chopped fresh chives
1/8 tsp dried thyme
1/8 tsp black pepper
4 large egg whites

1. Preheat oven to 350 degrees F.
2. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion and sauté 2 minutes or until crisp-tender. Add ham and sauté 3 minutes. Remove from heat and cool 5 minutes.
3. Combine remaining ingredients in a large bowl – stir with a whisk. Add ham mixture, stirring with a whisk.
4. Spoon mixture into 24 miniature muffin cups coated with cooking spray. Bake at 350° for 20 minutes or until set.
Yield: 8 servings (39 calories, 1.3 g total fat, 0.5 g saturated fat, 4.4 g protein, 2.3 g carbohydrate, 0.4 g fiber, 32 mg cholesterol)
