A light salmon dish for a quick meal at home. The salsa can be made ahead to save prep time. In the warmer weather, the salmon can be grilled outside as well.
2 tsp chili powder
1 tsp ground cumin
1/2 tsp salt
1/2 tsp ground coriander
1/4 tsp ground chipotle chile powder
4 (6-oz) skinless salmon fillets
1 cup chopped red bell pepper
1/4 cup chopped tomato
2 Tbsp chopped red onion
1 Tbsp chopped fresh cilantro
2 tsp fresh lime juice
1. Combine chili powder, cumin, salt, coriander, and chipotle chile in a small bowl. Rub spices evenly over salmon fillets.
2. Heat indoor grill pan over medium-high heat. Coat grill pan with cooking spray and add fillets to pan. Cook 4 minutes on each side or until done.
3. While fish cooks, prepare salsa. Combine all ingredients in a bowl. Serve salsa over fish fillets.
