Simple, quick & easy! Deliciously light when served with some steamed vegetables.
4 (6-0z) tilapia fillets (or other white fish)
1/2 cup fresh orange juice
3 Tbsp fresh lime juice
1 Tbsp brown sugar
1 Tbsp olive oil
2 tsp low-sodium soy sauce
1/2 tsp ground cumin
1/4 tsp black pepper
1/4 tsp ground red pepper
2 garlic cloves, crushed
1/2 tsp paprika
1. Arrange fish in a single layer in a shallow roasting pan coated with cooking spray.
2. Combine orange juice, lime juice, sugar, olive oil, soy sauce, cumin, black pepper, red pepper, and garlic in a bowl. Stir to combine and pour over fish. Let stand at least 15 minutes.
3. Preheat broiler.
4. Sprinkle fish with paprika. Broil for 10-15 minutes or until done. Drizzle sauce over fish for serving.
Yield: 4 servings (225 calories, 6.6 g total fat, 1.5 g saturated fat, 34.8 g protein, 7.5 g carbohydrate, 0.4 g fiber, 85 mg cholesterol)
