Herb Marinated Shrimp

Serve over a fresh green salad, over rice, in a wrap, or by themselves! Delicious, versatile, and easy!


3/4 cup fresh cilantro leaves
3/4 cup fresh parsley leaves
1/2 cup fresh basil leaves
3 Tbsp olive oil
3 Tbsp orange juice
1 Tbsp lime juice
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
2 garlic cloves
24 jumbo shrimp, peeled and deveined
cooking spray

1. Combine first 10 ingredients in a food processor or blender and process until smooth. Place in a bowl, add shrimp, and toss to coat. Marinate in refrigerator for 30 minutes, stirring occassionally
2. Preheat broiler to high.
3. Remove shrimp from marinade. Thread 6 shrimp onto 4 wooden skewers.
4. Place skewers on broiler pan coated with cooking spray and top with any remaining marinade. Broil 5 inches from heat for 2 minutes on each side or until done.

Yield: 4 servings
