White Swai Fish Tacos

White swai is a budget-friendly white fish that is light in flavor and flakes apart easily. These tasty fish tacos pack a kick with the jalapeño peppers! An easy and delicious dinner.

1 small white onion, sliced
1 (8-0z) package mini sweet bell peppers
cooking spray
salt and pepper
4 (5-0z) white swai fillets
8 corn tortillas
1 small jalapeño pepper, thinly sliced
1 small ripe avocado, sliced
8 lime wedges

1. Grill or sauté onion and bell peppers until tender on a grill rack or pan coated with cooking spray. (In winter, I like to use my indoor stove-top grill pan for this recipe!)
2. Combine onion, bell peppers, salt, and pepper in a small bowl.
3. Sprinkle fish with black pepper and salt as desired. Heat a large nonstick skillet over medium-high heat and coat with cooking spray. Cook fish 3 minutes on each side or until fish flakes apart easily and is done.
4. Warm tortillas according to package directions. Divide fish, onion/pepper mixture, jalapeño, and avocado evenly among tortillas. Serve with lime wedges.

Yield: 4 servings
