Pulled Barbecue Chicken and Coleslaw Sandwiches

This recipe makes a lot of servings (10!) but makes great leftovers. Come back tomorrow for a new recipe to use this leftover pulled BBQ chicken. Your family will love both recipes made with this deliciously easy chicken.

4 (6-oz) skinless, boneless chicken breasts
1 1/3 cups barbecue sauce
1 cup water
1/4 cup cider vinegar
1/4 tsp ground black pepper
whole-wheat hamburger buns
coleslaw (you can make your own or buy some)

1. Combine chicken, BBQ sauce, water, vinegar, and black pepper in a saucepan. Bring to a boil, reduce heat, and simmer covered for 18-20 minutes or until chicken is done. Remove chicken from sauce (keep sauce). Cool chicken and shred.
2. While chicken cools, return sauce to a boil, uncovered, for 15 minutes or until reduced by half. Stir in shredded chicken and cook 1-2 minutes or until thoroughly reheated.
3. Serve chicken on buns topped with coleslaw.

Yield: 10 servings (1 bun, 1/2 cup chicken mixture, 1/4 cup coleslaw)

Nutrition Information per Serving: 296 calories, 4.4 g total fat, 1.2 g saturated fat, 21.2 g protein, 41.6 g carbohydrate, 40 mg cholesterol
