This is one of my favorite pork recipes to make! It is very quick and delicious – the balsamic vinegar and the caramelized shallots are a great compliment to the pork. Serve with some pilaf and steamed veggies for a complete meal!
4 (3/4-inch thick) pork chops (about 2 lbs)
salt and pepper as desired
2 Tbsp olive oil
6 oz small shallots, peeled and quartered
2/3 cup balsamic vinegar
1 1/2 tsp sugar
1. Pat pork dry and sprinkle with salt and pepper as desired.
2. Heat oil in a large skillet over medium-high heat. Sauté shallots for 2-3 minutes or until tender. Sear pork chops in the pan with the shallots on both sides until browned, about 2 minutes each side.
3. Add vinegar to the skillet with pork and shallots; sprinkle the sugar throughout pan. Stir.
4. Cook until vinegar has thickened and pork is cooked through, making sure to turn pork chops 2-3 times to coat with the sauce. (If the pork is finished cooking before the sauce has thickened, remove pork from pan and keep warm while the sauce finishes.)
