What am I having for dinner tonight? This recipe for Chicken with Honey-Beer Sauce! I will serve this with a fresh salad and a whole-wheat dinner roll for a complete and delicious meal! This recipe cooks up in about 20 minutes – perfect for a weeknight in!
2 tsp canola oil
4 (6-oz) skinless, boneless chicken breasts
salt and pepper to taste
3 Tbsp thinly sliced shallots
1/2 cup beer (I have some Blue Moon wheat ale on hand)
2 Tbsp lower-sodium soy sauce
1 Tbsp whole-grain Dijon mustard
1 Tbsp honey
2 Tbsp fresh flat-leaf parsley leaves
1. Heat a large skillet over medium-high heat. Add oil to pan swirling to coat. Sprinkle chicken as desired with salt and pepper and sauté 6 minutes on each side or until done. Remove chicken from pan, keep warm.
2. Add shallots to pan and cook until translucent, about one minute. Combine beer, soy sauce, mustard, and honey in a small bowl, stirring with a whisk. Add beer mixture to shallots in pan and bring to a boil. Scrape the pan to loosen any browned bits. Cook until liquid is reduced to 1/2 cup, about 3 minutes.
3. Return chicken to pan, coat with sauce. Prior to serving, sprinkle evenly with parsley.
