Baking Smart

I enjoy baked goods just like anyone else, but I typically adapt the recipe to make it slightly healthier without sacrificing taste! Test out the following tips on your favorite baked goods and see for yourself!

General Tips

  • Follow serving size when consuming baked goods
  • Make cupcakes to control portion size
  • Use whole wheat flour when possible (often I substitute 1/2 of the all-purpose flour with whole wheat flour)
  • Fat substitutes (see below)
  • Make your own frosting (see recipe below)
  • Top your batter with nuts before baking instead of using frosting
  • Serve 1/2 a box or recipe to control how much you consume
    • Freeze half for later (I often freeze my baked goods – just thaw and eat when desired!)
    • Cut recipe in half (if using cake mix, save half in a zip bag)

Fat Substitutions

  • Replace one egg with liquid egg whites or egg substitute to cut fat and cholesterol
  • Replace half the fat with:
    • Applesauce
    • Plain yogurt
    • Ripe bananas (carrot or banana cake only)
    • Fruit purees or baby food in similar fruit flavored cakes

Make your own frosting: Cream Cheese Frosting

Ingredients: 
1 (8oz) package Fat Free cream cheese
1 (8oz) tub Cool Whip Free Whipped Topping
1/2 cup Splenda
1/2 tsp vanilla extract
Directions:
In a medium mixing bowl, beat cream cheese until soft. Add Cool Whip, Splenda, and vanilla extract. Mix until smooth. Makes 12 servings
